Driving to Kooser State Park in the lovely Laurel Highlands, my husband and I passed this roadside stand and decided that if they were still there when we came back, that we'd stop. HOOOOOOOEY, am I glad we did! For $20 we got a full rack of ribs and 2 large sides! The ribs were smoked in the dry rub style, with your choice of sauce (regular or hot) served on the side. Using one of the bones to hold the rack, I was going to cut it but the bone fell right off of the meat....no knife or fork necessary! The dry rub was delicious, but the sauce (I had regular) put these ribs over the top. My husband (who is from the south) had the collard greens for his side and declared them to be some of the best he's ever had, with a slight spiciness to them. I had the scalloped potatoes, which while good, were super buttery! I mean BUTTERY. We are planning a camping trip at Kooser, and hopefully we'll be able to stop and get some ribs on the way up!
